Delicious egg recipe - Huevos Rancheros

Eggs are versatile and easy to prepare. They can be used in soups, fried or steamed, depending on how you want to cook them. Here is an interesting recipe that you may like enjoy.

Huevos Rancheros are a delicious Mexican breakfast that has many variations. Feel free to add or remove any toppings as you desire.

You will need:

  • 2 eggs
  • 1/2 avocado, sliced
  • 1 soft tortilla shell
  • refried beans
  • Mexican cheese
  • salse
  • sour cream
  • oil

Start by coating the bottom of of a frying pan with a bit of oil. Then heat it up and crack the eggs into the pan. While waiting for them to get cooked, place the tortilla on a plate and spread the refried beans onto it. Add some shredded Mexican cheese on top and place it in the microwave until the cheese melts.

Then flip the eggs. You should try doing this as it is rather fun. At most you end up with an fried egg on the floor! If there is enough oil, the eggs should not stick onto the pan. Shake the pan and loosen them a little. Try flipping them into the air and onto the other side.

While waiting for the other side to get cooked, grab the tortilla out of the microwave and add in the slices of avocado. Slide the fried eggs on to the tortilla and add salsa and sour cream on top. It is that simple. This is one of the easiest egg recipes you can prepare. Enjoy!

Chinese fried rice recipes

Do you know that the Chinese fried rice is a very popular dish in the Chinese restaurants? You can also prepare this recipe easily if you have leftovers from your dinner. It is great with any meat or seafood, so let your imaginaation and creative juices run wild! Here are some tips to prepare this great recipe.

Firstly, use rice that has been left overnight in the chiller. It should not be freshly cooked because it will not give you a good texture, and cooking this recipe can be rather difficult. Chilling it overnight can help remove the moisture found in the rice, and thus making easier to separate and fry.

You will have to heat until the wok is hot, and them add in the oil. It has to be sufficient so that the ingredients will not stick, or they will not get burnt. And of cause you don't add in too much oil.

You will need:

  • 4 cups of cooked rice, left overnight in the chiller
  • cooked meats such as chicken and pork, or seafood such as fish slices or prawns
  • 1 finely diced onion
  • 4 tablespoons of cooking oil
  • 2 tablespoons of oyster sauce
  • salt and pepper
  • garlic or chilli powder (optional)

Directions:

  1. Beat the eggs and add salt and pepper to taste. Heat the wok and add a little oil. Place the eggs into the wok. Cook them and stir continuously, until they are almost cooked. Use your stirrer and 'cut' them up into small pieces.
  2. Remove the eggs and add in more oil.
  3. Add in the rice and fry for a few minutes. Then add in the leftover meats or seafood and stir.
  4. Add in the oyster sauce and then finally add the eggs back. Continue stirring and mixing to get an evenly cooked dish.
  5. Finally add in the onion and stir for another 30 seconds. Serve while it is hot.
