Chinese fried rice recipes

Do you know that the Chinese fried rice is a very popular dish in the Chinese restaurants? You can also prepare this recipe easily if you have leftovers from your dinner. It is great with any meat or seafood, so let your imaginaation and creative juices run wild! Here are some tips to prepare this great recipe.

Firstly, use rice that has been left overnight in the chiller. It should not be freshly cooked because it will not give you a good texture, and cooking this recipe can be rather difficult. Chilling it overnight can help remove the moisture found in the rice, and thus making easier to separate and fry.

You will have to heat until the wok is hot, and them add in the oil. It has to be sufficient so that the ingredients will not stick, or they will not get burnt. And of cause you don't add in too much oil.

You will need:

  • 4 cups of cooked rice, left overnight in the chiller
  • cooked meats such as chicken and pork, or seafood such as fish slices or prawns
  • 1 finely diced onion
  • 4 tablespoons of cooking oil
  • 2 tablespoons of oyster sauce
  • salt and pepper
  • garlic or chilli powder (optional)

Directions:

  1. Beat the eggs and add salt and pepper to taste. Heat the wok and add a little oil. Place the eggs into the wok. Cook them and stir continuously, until they are almost cooked. Use your stirrer and 'cut' them up into small pieces.
  2. Remove the eggs and add in more oil.
  3. Add in the rice and fry for a few minutes. Then add in the leftover meats or seafood and stir.
  4. Add in the oyster sauce and then finally add the eggs back. Continue stirring and mixing to get an evenly cooked dish.
  5. Finally add in the onion and stir for another 30 seconds. Serve while it is hot.
